Lamb chops with red wine and lime
Lamb chops are perfect for dinner when you don’t have much time to spare, coupled with lime and red wine this recipe turns plain old lamb chops into a dinner to remember.
Lamb Chops
Recipe is for 4 lamp chops
- 4 thick lamb chops
- 1 shallot, thinly sliced
- 1 clove garlic, crushed
- 4 mint leaves, thinly sliced
- 1/2 cup red wine
- 2 tablespoons lime juice
- Salt and pepper
In a large bowl combine all of the ingredients, add the lamb chops and marinade for 15 minutes. When the time is up, heat your frying pan to a medium high heat. Too hot and the shallots will burn, too low and your lambchops will not cook through. Add the lambchops (do not add the excess wine in the bowl, it will slow down the cooking process) and cook for 3 1/2 – 4 minutes on each side, flipping only once.
Serve with a warm lentil salad, green beans, scalloped potatoes or for an easier option mash potatoes.
