I know what you’re thinking. I too was a little skeptical, yet the flavours blend pleasantly and it’s the perfect pick me up to keep your sweet tooth at bay.
Muffins:
Makes 12 muffins
- 1/2 cup sugar
- 2 1/2 cups all purpose flour
- 1 tablespoons baking powder
- 2 eggs
- 1 cup milk
- 1/2 cup unsalted butter, melted
- 1 teaspoon vanilla extract
- 2 cups fresh diced strawberries
Preheat oven to 200 degrees Celsius
Bake for 20 minutes
Combine all the dry ingredients, sugar, flour and baking powder in a large bowl.Lightly beat the eggs then add the milk, butter and vanilla extract then whisk until smooth. Add the dry ingredients until combined. Stir in the strawberries and you’re done. Simple, eh?
Cinnamon Glaze:
- ½ cup powdered sugar
- 2 Tbs heavy whipping cream
- ½ tsp vanilla extract
- ½ tsp ground cinnamon
- Pinch nutmeg
Mix all ingredients together until combined. If you would like it thicker add more powdered sugar, to thin it out add more cream.

These are delicious served warm and are also a great breakfast treat, sans icing. For a glaze dip the tops of the muffins in the cinnamon mixture while they’re still warm, if you prefer it to be thicker wait until they are cool.
