Apple turnover
I had unexpected (yet always welcome!) guests over last night for dinner, but crisis struck when I realised I had no ice cream for dessert. None! Racking my brain for quick sweet desserts, I remembered that I had bought apples yesterday at the farmers market. I knew I could whip up some apple turnovers which would only take 10 minutes to prepare and 20 minutes to cook. Served with a side of cream, they were a real hit!
Apple turnover:
Recipe for 6 small turnovers
- 2 sheets puff pastry
- 3 apples, peeled diced
- 1 tablespoon corn flour
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1 tablespoon sugar
- 1 egg yolk
- 1 teaspoon water
optional(for serving):
- confectioners sugar
- cream
- ice cream
Preheat oven to 200 degrees Celsius
Line a baking tray with baking paper. Gently roll out the pastry on a lightly floured surface and cut the puff pastry in six 5-inch-by-5-inch squares. Combine the apples, corn flour, cinnamon, nutmeg and sugar in a bowl. Stir gently to combine. In a separate bowl lightly beat the egg yolk with a teaspoon of water.
Place the apple mixture in the center of each puff pastry square, lightly brush the edges with egg yolk, fold the pastry so it forms a triangle. Use the tines of a fork to gently indent the edges to help seal the pastry. Brush the top of each one with the remaining egg yolk, bake for 20-25 minutes.
Serve them with cream, ice cream, dust them with confectioners sugar or leave them plain!
